We feel we have made a real coup with this product. It is almost impossible to get any couscous, in the US at least, that is not instantized, precooked or whatever. Whether it is in a restaurant or in the gourmet grocery section, quick cooking couscous is a pale shadow of the real thing. This one from Moulins Mahjoub is the real thing and more. It is a hand rolled and sun dried couscous from Terouba, Tunisia and produced only in the summers from durum wheat semolina, salt and extra virgin olive oil. In Tunisia, this product is called M'hamsa, which translates into sundried wheat grains. Produced in the traditional Berber method, these large grains are hand-rolled and preserved with olive oil and sun, which give them a nutty, earthy flavor unlike any other couscous. Production begins by mixing semolina with olive oil, water, and salt, which is then pushed through screens. Complementary to almost all North African and Mediterranean cuisine, including stews, meat, and fish dishes. Also delicious with any of the four Les Moulins Mahjoub Couscous Sauces. As with all of the Mahjoub products, this is produced using traditional farming methods with no additives or artificial processes. We ship it in 1.1lb glass jars.Use about 1 to 1.5 cups water for each half cup of this couscous. Sprinkle the couscous over it and stir with a wood spoon to distribute the couscous throughout. Cover and cook for 5 minutes or until all the liquid is absorbed. Remove from heat, add a few spoonfuls of extra virgin olive oil of your choice. It is then ready to be part of an entree with poultry, meat or seafood or as a base for a salad. Once you have experienced this couscous, no other one will do.
