Our current favorite producer of classic mustards is Fallot, a firm in Beaune, France. Fallot has produced wonderfully silken mustards since 1840. Their closely guarded family recipes combine the best of several types of mustard seeds that are stone ground (no overheating to preserve their true taste). Mixed with white wine, verjus extracted from Burgundy grapes, and fragrant herbs and spices, these are not "Dijon Style" mustards, but the real thing. Slather away on sandwiches, add to salad dressings or sauces, and make happier hot dogs.We carry their classic smooth Dijon, mustard with grains, tarragon infused mustard, burgundy infused mustard, walnut infused mustard and a mustard with green peppercorns.The classic velvety smooth Dijon is a Cuisinette standard in vinaigrettes, but the tarragon or green peppercorn ones make very distinctive ones too. Use the tarragon one for simple mixed lettuces, especially in the summer and the green peppercorn one for hardier winter greens.The coarse grained mustard is especially good with pork dishes and makes a lovely sauce when you deglaze the pan juice. Just add a little bit of creme fraiche or mascarpone. The Walnut or Burgundy infused mustards are marvelous on classic sandwiches made with sliced beef or other cold cuts. Try them in sauces as well. The walnut mustard when combined with the LeBlanc walnut oil makes a superb combination with steamed vegetables such as broccoli and green beans.
