Mauviel produces several weights of copper cookware. The Presentation weight with stainless steel interior has a thickness of 1.2 to 2 mm. They are fitted with cast bronze handles fixed by sturdy rivets. Traditionally the food was cooked in the heavier hotel weight cookware and later served in this lighter weight version because it was easier for the waiters to carry. The smaller guage will still offer superior performance on any range. Au Gratins are similar to the round and oval frypans without the long handle. The double ear handles make then easier to transfer from the stovetop to the oven or table. These also work great as smaller sized roasting dishes for meats, poultry and vegetables.Measures 35 cm / 13.75 inches accross by 4.5 cm / 1.7 inches high.
