Most capers taste of the brine solution in which they're soaked. Italians, on the other hand, pack their capers in salt just after they are picked-a great improvement. Even better, we think, is our delicious, high quality brand of capers from Moulins Mahjoub in Tunisia. Picked in the mountains and dried in sea salt, the capers are packed in 100 gram jars. Reconstituted, they are the equivalent of 400 grams packed in brine. We have noted at the International Food Show, several Italian chefs thought these capers were better than the Italian counterparts!
