The hot decor in France comes out of the El Bulli molecular gastronomic adventures. It is an effervescent sugar that is almost like a a champagne bubble when eaten. We get it in large quantities from Thiercelin in France and put it in 4oz vol. jars, so our jar does not look like the one in the picture You can make your own chocolates with it or top a cupcake, cookie or pastry.
