A lovely rice from SARL Benoit in the French Camargue, which has been parboiled. Parboiling white rice has several benefits. It is basically raw rice that is boiled in the husk, which makes it easier to process by hand. It improves the nutritional value of the rice and improves the texture of the rice when it is cooked. The nutrients, particularly thiamine is driven from the husk into the grain so that parboiled white rice makes it almost as nutritionally complete as brown rice. The starches in this Benoit rice are harder and glassier, so it will take longer to cook, but it will be firm and never mushy. 17.6 oz package
