This fully forged design in the St Moritz series is also called a beef slicer. This is the knife most often used as an all purpose carving knife. You should have a long enough blade so that you slice cleanly across the width of a roast. This knife can do any meat, but to get very thin slices from salmon, ham and turkey, you should use the more flexible slicers with a rounded end featured in this section.
