Perhaps no other piece of professional cooking equipment has been as misunderstood and poorly copied as the awkward-looking but musically named mandoline. Sturdy and dependable, it will julienne, produce paper thin slices and create fluted and screen cuts. Food processor blades will not produce the same results. The all stainless steel models from Bron-Couke are the best in field littered with hapless imitators. There are 3 models: the 38 blade (all are named after the number of vertical cutting blades on the julienne spindle) produces a 3/8 inch wide cut and 1/8 inch julienne cut. The 44 blade model produces 1/4 inch wide cut and an even narrower julienne. The 60 blade model produces a 5/16 inch wide cut and the finest of juliennes. We sell the handguards separately since many professionals find them tedious to use. If you find it as awkward, use a heavy duty cloth as a protective guard.
