Unless you have very cold hands, a pastry blender is the best way to cut cold butter or lard into flour for flaky pastry. We have tried several variations of the classic pastry blender, and this commercial stainless steel version, has the received kudos from several Washington area pastry chefs, not to mention our own Cuisinettes. This model has a large handle that keeps your hand from cramping when you work the dough, and the blades are designed to lessen the clogging of the butter as you cut it into the flour. It also is serviceable alternative to a flour sifter as you can blend dry ingredients such as cocoa powder and ground spices in a bowl of flour. This is true happiness for the pie maker at Thanksgiving!
