Although she has made her stamp on regional French cuisine, this paperback from Patricia Wells, has lovely recipes from small restaurants throughout France. We use the Tuna Mousse as a tasting in the shop frequently. Silky red peppers, herb infused savory custards, sauteed chicken breasts with sage, rosemary roast pork, and her rendition of an orange and lemon cake have all been winners in Nancy's kitchen.
